I know many people use maple syrup, a tree sap - have you ever tried spruce tree sap? In Canada, we make "spruce beer", especially in Quebec. I wonder what that would taste like with coffee?
Loooove this guide! I’m in the works of developing a new drink for our cafe. I’m a big fan of earthy/floral/savory-esque drinks. Chamomile, thyme, roasted rice. Will definitely have to try out some of these processes.

I have not experimented with sap before but I’ll look into acquiring some. I’ve done some syrups with pine needles though.
